Baked eggs

 


This is a really quick teatime dish that I loved as a child and still do. Serve with whole-grain toast and raw vegetable sticks. To make it dairy-free use the alternatives suggested.

 


1 400 g (14 oz) tin of sweetcorn (no sugar, no salt)
6 organic eggs
a knob of butter or unhydrogenated margarine
a splash of whole milk or soya milk

 


Grease 4 ramekin dishes. Divide the sweetcorn between the ramekins, evenly distributed in the bottom, and crack an egg on the top (adults will probably want two eggs). Put a little butter or margarine on top of the eggs and a splash of milk around the sides. Bake for 10-15 minutes at 180°C/350°F/Gas Mark 4.
