Beany Bake
Beany Bake is a vegetarian dish that is quick, cheap, and easy to make using store cupboard items. It is naturally sweet with plenty of protein and fibre, and is energy-dense and comforting, making it perfect for colder weather. The dish can be made in advance and then baked at the last minute, and there are many variations that you can try.

Fun Nutritional Fact!
The onion in this dish adds extra flavour and additional health benefits due to the sulphur compounds and flavonoids it contains.
INGREDIENTS
- 1 x 425g tin of baked beans (I use @wholeearthfoods)
- 1 x 200g tin of sweetcorn, drained (in water, no sugar or salt)
- 1 x 210g tin of kidney beans, drained (in water, no sugar, no salt) (optional)
- 1 small onion, chopped finely
- 4 potatoes, peeled and chopped
- 100g cheddar cheese, grated (I use @yeovalley)
INSTRUCTIONS
- Gently cook the onion in a little olive oil until softened and transparent.
- Boil the potatoes until cooked, drain, mash and mix in the cheddar cheese.
- Add the baked beans and sweetcorn to the onion along with the kidney beans if using. (For younger children, I suggest you make this with just the baked beans and sweetcorn first.)
- Transfer the onion and bean mixture to a greased ovenproof dish.
- Cover with the cheesy mash and bake in the oven for 20 mins at 180oC until the potato is turning lightly golden and the bean mixture bubbling.
- Serve with some broccoli or a crunchy salad.
