Pumpkin seeds are nutritional powerhouses and contain protein, fiber, and essential minerals such as potassium, magnesium, iron, and zinc that are vital for immune health, brain health, cardiovascular health, and digestive health.
INGREDIENTS
- 9 medjool dates, pitted (if using dried dates, soften in boiling water and drain)
- 200g (2 cups) rolled oats
- 50g (5 tbsps) milled flaxseed @linwoodshealthfoods
- 3 rounded tbsps pumpkin seed butter or (sunflower seed or tahini)
- 6-8 tbsps cooled boiled water
- 150g 70-85% dark chocolate, melted with a tsp coconut oil.
INSTRUCTIONS
- To make homemade seed butter blend dry roasted seeds in a food processor for 10-15 minutes, scraping down the sides at intervals, until you have a runny nut butter. Add 1-2 tsp of coconut oil to help the blend if too dry.
- Put all the ingredients together in a food processor (apart from the chocolate) and blitz until it forms a solid dough. Add the water a tbsp at a time until a dough forms.
- Take walnut size chunks and roll into balls in the palm of your hand.
- Melt the chocolate in a bowl over a pan of boiling water with the coconut oil. Keep stirring until the chocolate is a smooth liquid.
- Roll the balls in the chocolate. Place on a lined baking tray.
- Chill in the fridge for an hour.
